May is an extremely busy month for us! If I don’t try to plan ahead for meals, it makes evenings even more stressful. Using the crockpot has been a lifesaver. Since I want to keep saving money, I try to get most of my groceries at ALDI. I thought I would make a list of Easy ALDI Crockpot Dinners to help with these busy schedules.
All of these recipes can be made with ingredients purchased at ALDI. I’ve included links to the recipes and shown pictures of the ingredients I find and use from ALDI.
Carnitas Pork Roast
This Carnitas Pork Roast is by far my favorite crockpot find at ALDI! It is so easy and turns our amazing in the crockpot. The entire family loves it. There are so many different meals you can make with this roast.
To make this roast, just follow the instructions on the package. You can cook it in the oven or the slow cooker. I always cook it on low in the crockpot for about 8 hours. There is no need to add any liquid. Just open the package and dump it in! Once it is done, I shred the meat with two forks. The kids like it on a slider bun or in a tortilla. I like to add it to the Southwest Salad Mix from Aldi.
Crockpot Chili
This chili recipe is a family favorite! I actually made it over the weekend since we had a soccer game and a four hour track meet on Saturday. It was so nice to come home to a warm meal.
This meal does require a little more preparation since you need to brown the ground beef. Once that part is done, it is super fast and easy though. I follow this recipe except I do leave out the onions (family preference) and blend the tomatoes.
Crockpot Chicken Taco Soup
I love having a batch of Taco Soup on hand during the week! The leftovers are perfect for lunches. It is easy to throw this soup together in the mornings for an easy dinner. It also freezes really well if you wanted to make it ahead of time.
To make this taco soup, you only need one chicken breast, frozen corn, black beans, taco seasoning, and diced tomatoes. I have started blending the tomatoes since my kids have become really picky about chunks of tomato. It works great either way.
Salsa Chicken
My kids love this salsa chicken recipe! I love it because it is so easy. It is one of those you can just dump into the crockpot and forget about until dinnertime. Frozen chicken even works great for this. All you need for this easy recipe is chicken, a jar of salsa, and a block of cream cheese.
There are a number of different ways to serve this salsa chicken. We usually have it wrapped in tortillas. I’ve also done lettuce wraps for myself or just eaten it with tortilla chips. Rice Bowls would be another great way to use this chicken.
Crockpot Ravioli
Here is another easy dump and go recipe for you! To make Crockpot Ravioli, pour a 25 ounce bag of frozen ravioli into the crockpot and then add a jar of your favorite pasta sauce. Cook on high for about 3 hours or on low for 6 to 7 hours. Add mozzarella cheese about 20 minutes before serving.
This is a great family meal! Serve with a salad or green beans. Any variety of ravioli would work but we just use plain cheese ravioli for my picky eaters.
Crockpot Barbecue Chicken
I have been making barbecue chicken in the crockpot like this for years! The recipe is super simple and you can even use frozen chicken. The only modification I make is omitting the red pepper flakes.
I like to bake a few potatoes in advance to go along with this. Some nights I just bake fries in the oven and serve with a veggie and fruit. This chicken is great for stuffed potatoes, rice bowls, sandwiches, and BBQ Chicken Pizza.
