Simple Crock Pot Chicken Taco Soup

Slow Cooker Chicken Taco Soup - Super Easy RecipeTaco Soup is not a new concept. Most of us have made it or at least tasted it. This meal is a life saver for me on a busy day. It takes no time to throw it all in the crock pot in the morning!  With fall coming up, this will be on our menu plan a lot.

Here is the recipe I use:

  • 1 can black beans
  • 1 can diced tomatoes
  • 1 can diced tomatoes with green chiles
  • 2 tablespoons taco seasoning (more if you like)
  • 1 1/2 cups frozen corn or 1 can corn
  • 1 cup water
  • 1 chicken breast (this can be a frozen chicken breast)Slow Cooker Chicken Taco Soup

Place all ingredients in the crock pot and cook on low 4 – 6 hours. Remove chicken breast and shred. Return chicken to crock pot and mix into soup.

Serve with shredded cheese, sour cream, and tortilla chips. Enjoy!

    I make this quite often. I love making it because I can change it up throughout the week by serving over vermicelli, cornbread, orzo, quinoa, etc.

    I agree – with fall coming up, this is going to be on my menu quite a bit. I have a slow cooker, plus an IP, so I have a feeling that somedays I will trend towards the slow, while others will fid me quick cooking the joy.

    This looks delicious. I’ve made a chicken taco chili in the crockpot that my family loves. It was similar to this recipe. So, I’m sure they would love this too! Happy to have another recipe in the rotation!
