Taco Soup is not a new concept. Most of us have made it or at least tasted it. This meal is a life saver for me on a busy day. It takes no time to throw it all in the crock pot in the morning! With fall coming up, this will be on our menu plan a lot.
Here is the recipe I use:
- 1 can black beans
- 1 can diced tomatoes
- 1 can diced tomatoes with green chiles
- 2 tablespoons taco seasoning (more if you like)
- 1 1/2 cups frozen corn or 1 can corn
- 1 cup water
- 1 chicken breast (this can be a frozen chicken breast)
Place all ingredients in the crock pot and cook on low 4 – 6 hours. Remove chicken breast and shred. Return chicken to crock pot and mix into soup.
Serve with shredded cheese, sour cream, and tortilla chips. Enjoy!
Not only is this a quick and easy meal, it is pretty inexpensive to make. It is great for those nights that we have soccer practice or any other after school activity. What is your go to recipe for a busy week night?

I agree – with fall coming up, this is going to be on my menu quite a bit. I have a slow cooker, plus an IP, so I have a feeling that somedays I will trend towards the slow, while others will fid me quick cooking the joy.
