Menu Monday – Freezer Challenge Week 6

Weekly Meal Plan Freezer Challenge to help stock your freezer the easy way with leftovers.It is the final week of the Freezer Challenge inspired by Stock Your Freezer the Easy Way! This has been an awesome challenge and I hope it has inspired someone else. Next week I will plan to do a recap of the challenge and we may start having a couple of our freezer meals to make things a little easier through the week.

This week I started the challenge off by freezing Cheeseburger Quesadillas. We had Ground Beef Tacos for dinner last night. That is one of our favorite meals which means we did not have a whole lot left over. I had two cups of taco meat leftover that I mixed with 3/4 cup of black beans and some shredded cheese. I put that mixture in some flour tortillas and flash froze them this afternoon before putting them into the freezer bag. That is one meal I am definitely looking forward to having again in a couple of weeks!

I am trying a couple of new recipes this week with the Crock Pot. (The Instant Pot is still sitting in the box.) We’ll be having a Crock Pot Chicken Enchilada Casserole and Crock Pot Chili. I think I may be able to freeze some of each of these. We will see! We usually make chili on the stove but I have afternoon plans. I thought this would be an easy way to have dinner already going while we are out and about!

Here is what we have planned for the week:

  • Sunday – Ground Beef Tacos served with Black Beans and Salad
  • Monday – Crock Pot Enchilada Casserole
  • Tuesday – Crock Pot Chili
  • Wednesday – Leftover Night
  • Thursday – Baked Potato Bar (saving a little chili for this too!)
  • Friday – Homemade Pizzas
  • Saturday – Prosciutto Pasta

I hope to break out the Instant Pot this week and at least read the instructions! I’ve heard you can make awesome homemade yogurt in it. I’ve gotten a few ideas from some fellow bloggers as well that I am anxious to try. I’ll put together a round up of those posts later this week in case anyone else is interested in getting started with the Instant Pot. If you already have some recipes, please feel free to share them!

    You are going to have such an awesome selection in your freezer! I haven’t had a baked potato in ages, I love the idea of a baked potatoes bar.

    I need to get so much better at this! I’m so terrible at meal planning, but having some freezer meals ready to go would make weeknights much easier.

    I love this! I haven’t done any freezer cooking in a while. I do prep all my food so it is easy to start cooking right away, but I miss having those full meals in the freezer. Thank you for the inspiration!
