Peanut Butter Crunch Powerballs

Peanut Butter Crunch PowerBallsI don’t know about you, but we still have lots of Halloween candy hanging around! I have a really hard time during this season of the year caving to the sugar monster. This week I decided to take control of it and make these yummy Peanut Butter Crunch Powerballs. They still have enough chocolate to make me feel like I am getting a treat. Peanut Butter and Chocolate is my favorite combination.

These are super easy to make. There are tons of different recipes around for snacks like this. I have used several and have just tweaked them to show you the combination that we enjoy most.

Peanut Butter Crunch Powerballs are a healthy snack

 

Ingredients

  • 1 cup oats
  • 1 cup crispy rice cereal
  • 1/2 cup peanut butter
  • 1/2 cup flax meal
  • 1 teaspoon pure vanilla extract
  • 1/2 cup chocolate chips
  • 1/3 cup honey

Directions

Combine all ingredients and chill mixture in the refrigerator for at least 30 minutes. Form the mixture into about 1 inch balls and store them in an air tight container in the refrigerator.

Peanut Butter Crunch Powerballs

I hope you enjoy this snack as much as we do. Try it the next time your sugar monster is out of control! This is also a great snack to take on road trips. We’ll be taking some of these powerballs in the car when we travel this holiday season!

    Any suggestions on a substitute for the oats? My son has celiac and reacts even to GF oats ๐Ÿ™ Maybe just with the cereal?

      Yes, I would just increase the cereal. You can also add Chia Seeds and/or Raisins. A lot of recipes use coconut flakes too but my family is not a fan.

    In the process of making these with crunchy almond butter, whole dried coconut flakes, Meusli and mini chocolate chips OMG I can NOT stop nibbling as I mix!!
