I don’t know about you, but we still have lots of Halloween candy hanging around! I have a really hard time during this season of the year caving to the sugar monster. This week I decided to take control of it and make these yummy Peanut Butter Crunch Powerballs. They still have enough chocolate to make me feel like I am getting a treat. Peanut Butter and Chocolate is my favorite combination.
These are super easy to make. There are tons of different recipes around for snacks like this. I have used several and have just tweaked them to show you the combination that we enjoy most.
Ingredients
- 1 cup oats
- 1 cup crispy rice cereal
- 1/2 cup peanut butter
- 1/2 cup flax meal
- 1 teaspoon pure vanilla extract
- 1/2 cup chocolate chips
- 1/3 cup honey
Directions
Combine all ingredients and chill mixture in the refrigerator for at least 30 minutes. Form the mixture into about 1 inch balls and store them in an air tight container in the refrigerator.
I hope you enjoy this snack as much as we do. Try it the next time your sugar monster is out of control! This is also a great snack to take on road trips. We’ll be taking some of these powerballs in the car when we travel this holiday season!
Oooh! These sound good and easy to make. My kids would enjoy these.
Thanks Kristi! They are a great snack for kids!
These sound good and easy! I’ll be trying them soon.
Awesome Joy! I hope you enjoy them!
Any suggestions on a substitute for the oats? My son has celiac and reacts even to GF oats ๐ Maybe just with the cereal?
Yes, I would just increase the cereal. You can also add Chia Seeds and/or Raisins. A lot of recipes use coconut flakes too but my family is not a fan.
Yum! I love snack bites like this.
Me too! They are great energy boosters!
I love how easy these look! And I actually think this is something my kids would eat too! (Gasp!) ?
