Mini Strawberry Ice Cream Pies

I used to make ice cream pies all the time in college! They are so fun and easy to make. Of course they are delicious too! This summer I thought I would try a mini version of the ice cream pie and it was a hit. These Mini Strawberry Ice Cream Pies are super cute and fun to serve for guests or just to have in the freezer for a special treat.

Ingredients for Mini Strawberry Ice Cream Pies

Target has a seasonal Strawberry Swirl Ice Cream out for summer that we used for this simple dessert. It is so good. Any strawberry ice cream would work though!

Ingredients for Cute Mini Strawberry Ice Cream Pies for Summer

Here are the ingredients you need for the mini ice cream pies.

  • Mini Graham Cracker Pie Crusts
  • Any variety strawberry ice cream
  • Mixed Berry or Strawberry Syrup
  • Cool Whip

How to Make Mini Ice Cream Pies

These mini pies are super easy to make! Start by adding a little of the syrup to the bottom of the pie crust. We used a mixed berry syrup but strawberry would work great as well.

Then add a scoop of ice cream on top of the syrup and smooth it into the crust. After that top the ice cream with Cool Whip. You want to make sure the Cool Whip is not completely frozen to make it easier to spread.

For the last step drizzle the berry syrup on top of the Cool Whip. This makes it look a little more fancy! Plus it is delicious too!

Once you have it all assembled put them in the freezer for at least an hour before serving. Now they will be ready to serve whenever you get ready. This makes a super easy make ahead dessert if you need something for a party or gathering!
