Have you ever tried making your own granola cereal? It is so easy and tastes way better than the store bought variety! I’ve made a few different recipes before but decided I wanted to try making a nut-free version. Some of the schools and camps around here do not allow snacks or lunches containing nuts.
I decided to use oats, Cheerios, puffed rice and sunflower seeds. You could always add in dried fruit or coconut flakes as well. (more…)
Do you have an appliance that you use everyday? For us it is the espresso machine and the smoothie blender. I make the kids a Peanut Butter Chocolate Banana Smoothie every day. I keep waiting for them to get tired of it. Since they have one every day, I prep them three at a time. The accountant in me loves the efficiency of this process.
I am almost embarrassed to share this recipe because it is so easy! I feel like I should because it definitely comes in handy for a busy family. We had another busy weekend! Gavin turned eight years old last week and had a couple of boys over to play Nerf Wars. These boys were full of energy! We had ordered pizza and made some yummy snacks but they were almost too busy to eat. I tried a peanut butter yogurt dip that was really tasty. (more…)
We had a very busy weekend! Graylie turned three years old last week so we had a few friends and family members over to celebrate. Needless to say, my normal way of menu planning was thrown off a little. I normally would have prepared a dinner on Saturday night that could also be used Monday night for dinner. Since we had ordered a nugget tray from Chick-fil-a and had lots left over, we decided to have chicken nuggets for dinner that night! The kids were thrilled with that option. It is strawberry season in North Carolina and that makes me happy! We stopped by the produce stand this weekend to pick up a bucket. One of my favorite breakfasts during the week is a bowl of berries and yogurt topped with granola. I try to prep this the night before by putting the fruit and yogurt in a bowl so that I only have to add the granola in the next morning. (more…)
Welcome back to Menu Monday! As I explained in last week’s post, we plan from Saturday to Friday and do most of our cooking on the weekends. Having leftovers is necessary for us to have things go more smoothly in the evenings. We get home around 5:30 pm and the kids need to be heading upstairs for showers around 7:00 pm. This doesn’t leave a ton of time for getting dinner prepared and other responsibilities like helping with homework. Luckily we are only dealing with 2nd grade homework right now!
We got a bit of a snow storm this weekend and were happy to have our favorite soup planned for Sunday evening!
Happy Monday! Did you do any meal prepping over the weekend? I did not do near as much as I would have liked. I did at least make a meal plan for the week. I thought I would share it with you. Who doesn’t love waffles? We got a waffle maker this year for Christmas and have had so much fun with it. Who knew all the things you can make besides just regular waffles! We have made waffle grilled cheese and waffle peanut butter and jelly sandwiches in it. Most recently, we decided to try egg waffles. Even Gavin loved these and he usually will not eat eggs. (more…)
