Grocery Budget Busted – ALDI to the Rescue!

As I mentioned before, I am not great at personal budgeting. I’m not sure what I was thinking. We came up with a number for a monthly budget on groceries and I guess I just thought it would magically happen. I sat down last weekend and added up all my grocery charges and realized I had already gone over by about $50! How did that happen? With a little over a week left in the month, I wasn’t sure what to do. We could cover it but I really wanted to stick as close to the budget as possible. (more…)

Menu Monday

meal prepThis will be the last Menu Monday for a few weeks. I’ll still be meal planning over the summer but it will be way more flexible. It could involve lots of random salads and grilled cheese sandwiches. I’ll still be trying new recipes that I find on Pinterest so I’ll be sure to post those on Facebook!

This week got thrown off a little. The dish we were supposed to have on Sunday called for chicken that I had in the freezer. Around 4:00 it hit me that I had never taken it out of the freezer! Good thing I had all the ingredients for our all time favorite Lasagna Soup! (more…)

Weekly Meal Plan

It officially feels like summer! School is out on Friday and the pool has been open for weeks! If you are like us, we love being able to grill out more. This weekend I tried a new recipe for Sausage and Veggie Foil Packs. These would be awesome to take on a camping trip. We used a bratwurst sausage in ours and threw them on the grill. The next night we grilled chicken and corn on the cob. Delicious! (more…)

Meal PlanningHappy Memorial Day! I hope everyone had a great time this weekend! We definitely took advantage of the long weekend with a trip to the zoo and our first pool outing of the season. So much fun! In fact I was so busy with swim suits and sunscreen that I forgot to start our pork tenderloin in the crock pot this morning. We improvised with a new recipe for the grill so it worked out nicely! (more…)

Meal Planning for a busy familyHappy Monday! I hope everyone has had a great start to a new week! We have been pretty busy. When your child is in preschool, there are lots of birthday parties to attend. We don’t go to all of them but I do enjoy taking her to most of them. She loves playing with her friends from school so much! This weekend we were invited to a party on Sunday at 5:00. I wasn’t sure what I would do about dinner on Sunday night with a party at this time. Luckily I remembered an easy recipe for the crock pot! This Slow Cooker Hawaiian Chicken is so easy and delicious. I threw everything in the crock pot before we left for church Sunday morning and it was ready when we got home from the party. I have been on a mission to keep a weekly monthly grocery budget! This is a lot harder than I realized. It definitely helps that we meal plan each week and also use leftovers as much as possible. This weekend we grilled chicken so we saved the leftover chicken for rice bowls. This is a super easy and quick meal for weeknights. (more…)

Weekly Meal Plan

Last week we tried an amazing sheet pan recipe with Chicken and Veggies. I enjoyed it so much I wanted to look for another recipe. The one we decided to try this week was a Sheet Pan Steak and Veggies. It was very similar to last week’s choice but was not near as delicious. Β Instead of cooking the entire recipe to have leftovers, I decided to chop everything up and save half of it for the next night. That worked out really well for us this week. (more…)

meal planningAfter trying HelloFresh last week, we decided to go back to some of our tried and true favorites this week. Prosciutto Pasta is one of my all time favorite dishes and I think I could honestly eat this one every week. The Hawaiian Chicken is super easy and can be served over the extra noodles I cooked up from the Prosciutto Pasta. That is what we did Sunday night.Β  (more…)
